Cortisol is your primary stress hormone, produced by your adrenal glands. When functioning properly, it:
- Wakes you up in the morning (cortisol awakening response)
- Regulates blood sugar throughout the day
- Controls inflammation
- Manages your immune response
- Helps you handle acute stress
The problem? Cortisol is supposed to rise in a stressful situation and then retreat, this is the normal pattern. However, few things are normal these days. Chronic stressors often keep cortisol elevated 24/7. Moreover, Cortisol production does not decline with age. Your cortisol level at age 20 is the same as at age 90. All other hormones that are protective of aging, drastically decline with age (Thyroid, DHEA, Testosterone. Progesterone etc.) but cortisol remains the same.
Cortisol is the pro aging hormone; its activity produces every single sign of what we call “aging”.
First: What are the chronic stressors:
- Work deadlines
- Financial pressure
- Poor sleep (which raises cortisol, which worsens sleep—vicious cycle)
- Inflammatory diet (sugar, seed oils, processed food)
- Lack of sunlight
- Constant screen time
- Over-exercising without recovery
- Undereating or crash dieting
What are the signs of aging that Cortisol produces?
🔴 Metabolic Destruction
- Insulin resistance: High cortisol blocks insulin receptors, leading to high blood sugar and fat storage
- Visceral fat accumulation: Cortisol specifically triggers belly fat storage (the dangerous kind around your organs)
- Muscle wasting: Chronic cortisol breaks down muscle tissue for glucose (gluconeogenesis)
- Thyroid suppression: Cortisol blocks T4 to T3 conversion, lowering your metabolic rate.

Apple cider vinegar isn’t some folk remedy, it’s a legitimate cortisol-modulating compound with multiple mechanisms of action. Here’s the science:
Mechanism #1: Blood Sugar Stabilization = Lower Cortisol Spikes
The primary driver of cortisol throughout the day is blood sugar instability. When your blood sugar crashes, your body releases cortisol to raise it back up (remember, cortisol increases gluconeogenesis).
Acetic acid (the active compound in ACV) has been shown to:
